iTunes Genre

I'd like to just grab my iPhone and listen to a bunch of jazz. No playlist, just random jazz. Why does iTunes force me to listen to a whole album (in some cases just one song) rather than randomly cycle through a particular genre? I have so much music that it takes HOURS to sync, so i don't really want to go that route. HELP!
