How to change Apple ID from old to new?

I have an Apple ID but I forgot my password. I know the process on how to recover your password or user ID. But I want to do a full restore on my phone and then create an all new Apple ID as well and link that to my phone. My laptop already recognizes my phone on iTunes under my OLD Apple ID so how can I get it to recognize the NEW Apple ID on my NEW restored phone?

I own an iPhone4/4S running 8.3/8.4. forgot which one.

iPhone 5s, iOS 7.0.4, Boost Mobile

I think it is critical you continue to use your old account unless there really is nothing of importance used with it. These days everything involves a specific AppleID including downloading software on computers, purchases from the iTunes Store (which cannot be transferred to a new AppleID). Even if you want to use a new ID you have to know the old one to change settings.

Contact Apple for help with Apple ID account security - https://support.apple.com/en-us/HT204169 "This article provides country-specific Apple Support contact information for customers seeking help with their Apple ID password or other security-related issues."

Change iTunes Store account on an iOS device - Log out of your current account with Settings.app > Store (Settings > iTunes & App Stores on iOS 6) > tap on your AppleID. Log in with a different account. Note, turning on automatic downloads or re-download past purchases may tie the device to that account for 90 days - http://support.apple.com/kb/HT4627
