I wanted to know if, when we restore from a backup on itunes (for example an iPad) does the old version apps (that already aren't for download on the appstore) will appear on my restored iPad, and, will it have all the data in app (like pdf's) as when i did the backup?

When you restore from a backup you need to have all of the apps that you want on your device in your library. If an app cannot be reinstalled on your device during the restore then its private data won't be restored to the device.

Yes. If the app has been withdrawn from the store, and you don't have a copy in your library, or that you can transfer back into it from one of your devices, then the data cannot be restored. Apps themselves are not contained in the backup.

Well, but I have a copy of the app, at least it should be on itunes because when i did my backup, I followed this tutorial How to back up your devices using iCloud or iTunes - Apple Support, which starts by transfering purchases from ipad. right?
When you look in the mobile applications section of your iTunes library do you see the app in question? If so you're all good.
