Locking font on my email?

When I send an email from my computer to my client, my email is in Arial which is my desired font. But when I receive a response from my client, my previous email that I sent suddenly shows up in Times New, completely changing my signature at the same time. How do I lock my font so font stays the same as the way I send it.?
