Currently my iPad Air 2 shows in 3 hours and 3 minutes of usage and 3 hours and 25 minutes of standby since my last full charge I have gone to 63% of battery left. Is this normal battery usage or is it draining faster than it should?

Who knows. Maybe you were watching videos, etc., in which case you would be showing very good battery performance. Maybe your iPad was dormant in which case the performance would be fair.
Go to Settings > General > Usage > Battery Usage and check the applications using the battery to get a better idea.
I have brightness at about 50% and in the last 24 hours it says Youtube used 54% of the battery. Is battery okay based on that?
Sure.
If you don't want the battery use to be quite that fast, then use YouTube less.
