So mad with this upgrade! Can't sync what I want!

OMG, this new update is killing me! I can't add any of my music to my iPhone 6 and can't remove the music from the phone either. I use to be able to click what music I wanted under the music note icon, whether it be by the artist or the album and all options for that is gone now. Now it just says MATCH IS ON which I don't have, and voice memo's. When I first plugged my phone it also downloaded all my voice memo's from school that were on my comp ONTO my phone which I don't want!! Can anyone explain how I can regain control of MY music options??! Thank you!
