iTunes gift cards can be used to buy books. You need to add the card to your iTunes account. Scratch off the silver on the back of the gift card. Open iBooks, scroll to the bottom and there will be an option for Redeem, click on it and then enter the code from the back of the iTunes gift card. You balance will be updated upon successfully redeeming the card, iBooks should then use the gift card balance for your book purchases.

The gift card is redeemed onto your iTunes account, so it's available wherever you use that account (iTunes, app store, iBookstore, Mac App Store) and should automatically be used (unless gifting, that can't be done from an account's balance). What happens when you try to buy a book ? If it's charging your credit card then try contacting iTunes Support and see if they can see why it's happening : http://www.apple.com/support/itunes/contact/

I find that the book store always defaults to my Credit Card. I have a iTunes balance of over $100 and it seems to work only for music. I have opened support requests, and have not gotten an answer from Apple. Now with Apple Pay it might be nice to be able to establish a preference order for charging purposes. With the advent of Apple Music what good are Gift Cards if they are only selectively used.
