First place to look is the FBDIMMs

An EFI/SMC set of firmware updates (Aug Sept 2007) meant that the system began to rev up the fans when coming out of sleep or started if the internal temp0s were high enough. And heat does build up when in sleep mode if the case got warm, the fans were off, and needs that extra air and cooling.

If you let it cool first, and boosting the default fan speed can help, should also minimize this.

But if - and I would use Hardware Monitor or iStatPro - your FBDIMMs are below 70*C and the rest look normal, and fan speed is normal. The Fan Control app just gives one sensor setting of many and not as accurate.
