Is there a way to find out the name of the colors in the color palette (the 30 that appear as standard) and not just the codes? I'm looking for a "light gray" and not sure which one represents that, if any.

There are no labels that specifically describe a grey tone as light grey in Keynote, terms such as silver or mercury are used.
Light grey is an inaccurate term, dozens of levels of grey could have that description, it would be a personal opinion.
From the standard style palette, a light grey tone is marked in the red box, bottom row 2nd left:
The grey tones are from left to right: white, light grey, mid grey, dark grey, black.
For an accurate pick of a light grey tone use the colour wheel:
Do the colors in the color palette have names and where can those be found (similar to the crayons that have colors such as nickel, etc.)?
