I noticed today a contact in my phone was deleted, and the recent messages we have sent back and forth are no longer titled with his name. It is just his 7 digit phone number above the messages - no longer his original contact name that I saved. Is it a possibility that he could have blocked me? Why did his contact delete itself from my Contacts app? His is the only contact in my phone that has ever done this.

Once I deleted one of my email accounts from my phone, and then all of my contacts vanished. The conversations are still there, but the names have changed to phone numbers.
My iPhone likes to tether my contacts information to my email account and not to the actual phone or SIM card in the phone. Maybe this is what happened to you. :-(
Contacts do not delete themselves. Blocking you would not cause the contact to be deleted.
IF you are syncing your contacts with Facebook, and that person has unfriended you and blocked you on Facebook, it's conceivable that the contact information was removed from your Facebook account and thus, from your phone.
