I've just reset factory my Mac and a lot of the built-in apps (that I supposed to have freely) disappeared and I have to pay to get them back on Appstore. How can I get them back without paying?

These apps should be in your App Store Purchases list. If you don’t see them, they may be under Hidden Purchases. You can try downloading these apps from there.

It's empty in my purchases tab. Could you please show me how to access my Hidden Purchases?

I've logged in already but still can't see anything in my purchases tab. Follow your link, I can't see View Hidden Purchases in my Account Information page.
Access your backup HDD. They should all be there.
