It sounds like you're trying to manage your associated devices in iTunes after adding your recently purchased iPhone. Managing those devices is explained in the following Knowledge Base article:

Remove an associated device
To remove a device or computer from your Apple ID:
- Click to open your account in iTunes, or use these steps:
- Open iTunes, choose Store > Sign In, then enter your Apple ID and password.
- Choose Store > View Account.
- Click Manage Devices in the iTunes in the Cloud section.
- Click Remove next to the device that you want to remove.
When you remove your Apple ID from a device, the 90-day limit stays in place on that device. But you can associate your Apple ID to another device that doesn't have the 90-day limit. Depending on when you associated the device, you might need to wait to associate it to a new Apple ID.
If you mean instead that you are looking to delete your backups of older devices, that's done from the iTunes Preference window by going to iTunes> Preferences> Devices:

Displays a list of backups of devices that are synced with this computer. Encrypted backups are identified with a lock icon. Position the pointer over an item on the list to display the device’s serial number.
Delete Backup
Delete the selected backup. All backed up files are deleted and can’t be recovered.
Prevent iPods, iPhones, and iPads from syncing automatically
Prevent devices from automatically syncing with this iTunes library when a device is connected. To sync a device, click the Sync button when the device is connected.
Forget All Remotes
Disconnect every iPod touch, iPhone, and iPad paired with this iTunes library via the Remote app.
