Is there a way to find out if someone has been trying to guess my PIN code? I don't want to set my phone to erase after 10 attempts, but would like to know if someone has had a "sneaky" go at guessing my PIN.

There isn't a log or anything on the iPhone that records unsuccessful attempts on the PIN. If you're concerned about someone guessing your PIN, Go to Settings > TouchID and Passcode, and turn off Simple Passcode to change it to a more complex password. Bear in mind that if you forget the password, you'll have to reset the device to remove it.
