Two devices in itunes?

I have my iPhone synched to my iTunes account.

How do I synch my iPad to the account, if I do not want my phone & iPad to be synched to each other.

In other words, I want a set of data, etc on my phone, and a different set on my iPad.

Unclear to me how to do that, and not just make each device have the same info?
