I have an iTunes gift card, can I use it to pay for Apple Music monthly? Can it also be used for paying for an iCloud subscription?

Yes, it can. You'll need to have enough credit left from it to pay for the first renewal.

Thanks Niel! Got it, is there something I need to change in my settings to have it pull from my gift card balance instead of my credit card?

No. If you find that it's charging from the credit card when it shouldn't be, contact the iTunes Store staff.
