Create a custom icon

you cannot edit the contents of the Numbers toolbar. You can post feedback to Apple using the menu item "Number > Provide Numbers Feedback"

You can customize the Numbers toolbar via the menu View > Customize Toolbar.

However, you cannot (without rooting around in the Numbers app package, something to be avoided) create your own customized icon and have it appear on the toolbar.
