On Snow Leopard Server I was able to turn off ServerSignature by editing this line in /etc/apache2/httpd.conf:
ServerSignature Off
In Server 3.2.2 (OS X 10.9.5), I edited that line in /Library/Server/Web/Config/apache2/httpd_server_app.conf
But it has no effect. Anyone know how to turn this off?

I'll assume you've restarted after the change. If so, then grep -R for other references to that value elsewhere, and I'd likely then next try enabling overrides and placing the setting in the .htaccess file and see if that works.
Got it. It was in that file, but I had added it, not realizing it was listed again as "On" further down in the file.
