I need your help... I'm desperately trying to recover pictures that I've deleted from my phone a few weeks ago...
Does anybody know if that's possible ? And if so, how ?!

If you made a backup of those photos you can recover them there. If your phone is indeed running iOS 8.4 as your signature indicates use the Photos app and checked the Recently Deleted album. If the photos are there you can select them and recover them.
That's the problem ... I frequently (once a week) save the contents of my phone on my laptop through iTunes ... but now, when I check the backups, it shows me only the one I've done today and another one done ... a year ago. That's strange, I don't know where all the other backups are.
A backup is not "saving" the photos. It's a backup, designed to recover in case of a disaster. The backup is continually overwritten with the current backup, else you would rapidly consume huge amounts of disk space storing backups.
You should be extracting the photos from your phone to your computer on a regular basis as you would with any other digital camera.
If you were not doing that, they are now long gone.
