I keep getting the error message can't pair your iPhone software is out of date and to update to the latest firmware. I'm already on 8.4 so idk what to do I've tried resetting the phone and watch and doing every boot option and nothing has helped. Anyone know of a fix?? Here's a picalso of what pops up

Can you try a Restore of the phone? Back up to iTunes first (encrypt the backup if you want to save Health/Activity data).
Then Restore the phone and restore the backup.
That might kick it back to life
By the way - you seem have posted this twice.
tried that as well still nothing I've done a full restore and update and reset all settings
