I have an old iPhone 4 and an original iPad. I've reset them preparing to sell them or give them away. Both of them were backed up in iTunes, not in iCloud. How can I delete those old backups?

On a Mac open iTunes then on the menu go to:
iTunes > Preferences > Devices
Then Secondary Click on your desired device that you want to delete > Delete
