I understand they email you a receipt, but do they mail you one also? Assuming you don't overcharge, such that you dont need to
cover the remaining cost with your credit/debit card.

You only get an email receipt, you don't get one via post, and you will get one for all purchases (including in-app purchases), and whether it's paid for via your balance, credit card or a combination of both.
You can also view your account's full purchase history via your computer's iTunes : See your purchase history in the iTunes Store - Apple Support.
Do you get mailed your receipts to your mailing address even if you buy/IAP with store credit(i.e gift card)?
