Can't make a saving with itunes

Hello everyone,

I have an iphone since 1 year now and i wanted to make a savefile on my computer and maybe then dig to get my sms on a text file.

My problem is that when i start the save, itunes start "Saving iphone" during many hours without stopping. I also found the path to the saved files and after checking them, there was only 833Ko.

I tried many time to restart the process and always the same thing.

My computer is an i7 so i don't think it's hardware from computer problem...

Is there a way to solve that?

Is there another software to make a saving?
