How to get Itunes to not switch my file's album after I add them to a folder?

When I add an album to my Itunes Library, sometimes the album art doesn's show up. So I manually add them & they start downolading again via my torrent client. Sometimes I group compilation files into one folder but when I play them, they go back to their default folder. How do I prevent them from doing this?
