I have two email accounts -- one for personal email and one primarily for my Etsy business. Both are gmail accounts. My second (Etsy) email account just disappeared from my iPad. Both accounts are still on my phone and my MacBookPro. How do I retrieve that second account and put it back on my iPad?

You can add an email account back to the Mail app via Settings > Mail, Contacts, Calendars > Add Account - or if the account is already listed on the Mail, Contacts, Calendars screen tap on it and check if 'Mail' is 'on' for it.

I am able to add an email account that way, but don't seem to be able to name it as it was named last time. It is a gmail account, so that is what I picked when the "options" popped up for "add account." Can't figure out how to name the email account, but at least the mail is there.
You are referring to the account's description name that shows for it in the Mail app ? If you do then tapping on the account in Settings > Mail, Contacts, Calendars and then tapping the Account line (at the top) on the next screen should give you a popup with one line being 'Description' - tap that to change it
