Is it possible to pull the cellular data usage from my IPhone 5 in a more detailed way then from Settings > Cellular?

Not that I've ever seen. What kind of additional details are you trying to get? Your phone gives you details by app. Your carrier should be able to provide you some time information.
I was hoping to get a timeline for the usage. I wanted to compare it to what my carrier claims I use (I believe there is a large discrepancy).
I Use Verizon and through the my Verizon app can see detailed information down to specific website categories and data usage by each. Maybe your carrier has a similar app.
