I have a Mid-2011 27" iMac with 4gb of Ram. Can I add a 4gb and a 8gb of Ram to max out on the capacity?

Of course. You can install up to 32 GB of RAM on your Mac, but with a 4 GB and a 8 GB stick you will not get Dual Channel (it improves RAM performance). Have a look at OWC or Crucial to get RAM.

So I guess 2x8gb would be better then from a performance standpoint. I thought 16gb was the max for this machine type and year.
Officially 16 GB of RAM are the limit, but you can install 32 GB of RAM without any problem 🙂
