I have an older app on my iPhone. I don't like the new update. Is there a way to have it NOT show up as an update in the Available updates. I don't want to accidentally download the update.

An app will only update if you click on update. However, there is no way to remove the update notification from the App Store. your only choice is to make sure you do not select that update. Remember, however, that app updates many times contain security updates as well as other updates to improve the user experience. but it is up to you whether you update or not.

According to your profile you have iOS 8.3. That is one step down from the latest. Exactly what don't you like about iOS 8.4?
Personally I didn't any really noticeable differences between them.
