Either you are backing up to iTunes, backing up to iCloud, or not backing up at all.
If you have iCloud backups turned on, then it will not automatically back up to iTunes when you sync with iTunes. You can manually initiate a backup to iTunes if you like, but it will not happen by itself.

Aug 5, 2015 12:06 PM in response to Jarondadonby elcpu,Connect to iTunes on you Mac and do a Manual backup of your iPhone. Make sure to backup all Apps when/if presented with a pop up asking you to do so.

Aug 5, 2015 12:24 PM in response to Jarondadonby anypats,iCloud backup does not back up your apps. Once you restore the information, you can download any of your apps again from the App Store.
