What if I just want to use my external hard drives to back up my files. Do I still need to use iCloud?

Not at all. Just use TimeMachine or otherwise you can make a bootable and updatable backup clone with an App such as SuperDuper! or CCC (CarbonCopyCloner. There is no need to use iCloud if you do not wish.
