Read this user tip. Whilst this tip is for iTunes match, the principle is the same.
The main difference is that if you redownload the tracks to your hard drive, DRM will be added in Apple Music and you will lose access to that music if you unsubscribe (except for iTunes Store Purchases). For this reason, it is essential that you back up to an external drive.

I'm just concerned that if you delete it after it syncs then it will think you don't want that track anymore and remove it from the library. I just want to be clear before I do this. Of course, I will back it all up before.

THis is the user tip that should have been attached Make and keep a backup of your iTunes library, and only stream from the cloud.
