The iPhone will only contain the content that you have selected. If you do not select it, then it will not be on the iPhone.

The songs are not going to erase even if you add new songs to the your device until you connect to other itunes on other computer,if you have'nt connected to any other itunes on other computer, connect your phone to computer > open itunes > click on your device > go to music on your device > select sync music > select entire music library, then entire music that you had on itunes will be added to your device.
