Have you tried calibrating your Apple Watch? (outdoor walks / runs using the Workout app when you have your iPhone with you).
In addition to improving the accuracy of distance and pace measurements during walking or running workouts when GPS isn't available, the calibration process can also help to improve the accuracy of the calorie, distance, Move, and Exercise estimations in the Activity app. It calibrates the accelerometer by learning your stride length at different speeds and gets more accurate when repeated over time.
