Can I add columns to the playlist itself in the latest itunes?

Click on View in the top menu, then on View Options. Then click on the Show Columns dropdown to add columns to display. You can also change the "Sort By" default to a different option by selecting a different option in that dropdown.

Clicking any of the columns where the name of that column is will resort by that column type.

Recent builds of iTunes have introduced a new Playlist view which is the initial view of any playlist. Use the drop down control under the search box to change to the Songs layout and you should be able to edit the displayed columns as before.

tt2 is, of course, absolutely correct. If you click on Songs, you get the same window with the same dropdowns I outlined as you get when you click on View>View Options. But it is ever so much easier to click on Songs!
