Before iTunes 12, the status of the conversion was displayed in the window at the top that also shows what's playing. There was a little x next to the status so you could cancel the conversion. In iTunes 12, the display is gone and I can't figure out how to cancel a conversion.

On the right side of the info window there is an Up and Down arrow which you can use to change which task you want to view.
