I'm sorry to hear you are having these issues with your iPhone after a recent iOS update. If you are having issues with Music Voice Control activating inadvertently, you may want to try turning on Siri and see if you are seeing the same issues. Voice Control is inactive when Siri is activated, and vise versa, as noted in the following article:
Use Siri or use Voice Control
If you are using Siri, you won't be able to use Voice Control. To use Voice Control instead of Siri, go to Settings > General > Siri and turn Siri off.

Also, if you are using an Apple headset or similar, Voice Control (and Siri) can be invoked by holding down the center button on the cord remote, as noted on this page:

Use Siri or Voice Control. Press and hold the center button. See Make requests or Voice Control.
If you are using one of these headsets, you may want to test with a different headset, or with a pair of headphones without an in-line remote, to rule out any potential issues with the headset.
