If you have tried to stop the activity in the Workout app and it isn't responding, try restarting (or, if that doesn't work, force restarting) your Apple Watch:
Restart Apple Watch: Press and hold the side button until you see the Power Off slider; Drag the slider to turn off completely; Afterwards, press and hold the side button until you see the Apple logo.
Force restart: press and hold both the side button and Digital Crown for at least 10 seconds, until you see the Apple logo.
Use the Workout app on Apple Watch - Apple Support

Aug 17, 2015 7:17 AM in response to george85by george85,By the way, it took about 20 minutes to get the Outdoor walk button to start after me repeatedly touching the start button? Any thoughts? I made sure I stood in an open area with no trees or obstructions.

I suggest that you unpair and re-pair your Apple Watch and iPhone.
Before you do this, you should also update your iPhone to the latest version of iOS (if you haven't already done so):
Update the iOS software on your iPhone, iPad, and iPod touch - Apple Support
Your Apple Watch app on your iPhone takes backups of your watch automatically. When setting it up again after unpairing, choose to restore your Apple Watch from backup when offered the option (by the iPhone Apple Watch app). Some data is not included in the restore: calibration data (from Workout and Activity apps), synced playlists, cards used for Apple Pay on your watch, watch passcode.

I understand (from a duplicate thread you created) that Apple Support also advised you on Monday to unpair and re-pair your watch.
You reported that unpairing and re-pairing did not resolve your issue - you are still having problems with opening the Workout app and with starting and ending workouts, with the display not responding as it should do.
I suggest that you contact Apple Support again, particularly as they may now wish to inspect your watch.
