I see from your post that Numbers on your Mac is crashing. If this is occurring immediately after opening Numbers, then I'd like you to please follow the isolation steps in the link below. After isolating the issue, please let me know your results.

No, the Numbers didn't crash straight away, it was while working on a document that it would crash. However, I did have an older version of Numbers (iWorks 09) sitting on my menu bar at the same time. So I have trashed that version and now work with the latest version of numbers. This seems to have done the trick (touch wood). The problem could have been that I was using the older version, or flipping between the two, without knowing about it, thus creating software conflicts or whatever.
There is one thing that u could help me with about this newer version. Everytime I create a new document " .numbers" appears on the end of the string thus wasting a lot of screen space within the pane. Any ideas how I can remove this or stop it appearing?

I'm happy to see that the Numbers quitting issue has been resolved. I'm not sure what you mean about the file extension appearing in the pane. What pane are you referring to? If it's when viewing the documents in Finder then you can disable the option to Show all filename extensions. Otherwise it might have been saved to have ".numbers" at the end of the name.
For all files
If you select “Show all filename extensions,” all extensions are shown, even for files that have “Hide extension” selected. If you deselect “Show all filename extensions,” then file extensions are shown or hidden based on their individual “Hide extension” settings.

Choose Finder > Preferences, then click Advanced.

Select or deselect “Show all filename extensions.”
