How do I remove books from iTunes 12

Welcome to Apple Support Communities.
From what I gather, you would like to know how to delete audiobooks from iTunes or books from the iBooks app on your Mac Pro. You can delete an audiobook from iTunes by highlighting it and pressing the Delete key, as described here:

You can also delete books from iBooks by selecting the book and pressing the Delete key, as shown in this article:
