Synced photos to phone, wont unsync.

I have synced a folder of photos onto my phone for a birthday, and as i am trying to unsync them, itunes comes up with ' the iphone 'Caity's iphone cannot be synced because it cannot be found' but i have the sidebar with my phone details and stuff coming up? they take up too much space, so how can i get them off !!!
