How do I turn off Text Wrapping in Pages 5.5.3

Unless the behaviour has been changed in Pages 5, text will always wrap in text boxes, and, unless the box is linked to another, will generate an overflow marker and disappear beyond the bottom of the box when the text box is full.

Don't you select the text box, then go to Arrange and see options for Text Wrap?

That is for text in the body of the document to wrap/not wrap around the text boxes.
