I have the same situation with my iPad with Retina.
iBooks application works only after I reboot the device. Then I am able to read the books. But when I close the iPad for about 10 minutes I cannot open iBooks anymore - white screen appears for about 15 seconds and then the app is going in the background.
It looks like the update to iOS 8.4.1 made it... before it everything was fine.

I Read that hitting the arrow where it says ibooks on top and shutting off the show books in cloud stopped the freezing. So far so good
Happens for me as well. For me the problem came after trying to add and play an audiobook with many tracks.
Theory: it takes too long to start the iBooks process so iOS thinks it has stalled.
In the logs I see: "com.apple.iBooks failed to scene-create in time"
Workaround: changed type of the audiobook to music to be able to play it using the music player instead
NO music books here. But I stop iCloud books from showing and I hit rebooted iPad seems ok now

I have problems running several apps, mostly (only?) Apple apps, whereof iBooks is one. freezes with a gray screen on launchig and after a short while returns to the home screen.
the other apps suffrring similar problems are Safari, Mail and Podcasts.
Where are you finding the com.apple.ibooks log?

After the device has been synced, logs are available in this directory on a Mac:
~/Library/Logs/CrashReporter/MobileDevice/<device nickname>
With files with names like this:
stacks+iBooks-<time stamp>.ips
Corresponding to a failed start attempt, in this it says for my setup:

Same problem on the iPhone 6.

Other symptoms:
- Apple Store app doesn't open. Same behaviour.
- Settings -> iTunes & App Store doesn't open.

Rebooting helps, but problem reappears after some time.
Somehow, it all seems related to iCloud...
After a few days of working correctly back to iBooks not loading. Safari locking and email links won't launch
Did anyone reported it to Apple? What is their statement? Is it a bug in the 8.4.1 or something else?
