If you have successfully unpaired the devices, you can try pairing your Apple Watch manually.
(If your watch isn't unpaired yet, then on your watch tap on Settings > General > Reset > Erase all Content and Settings).
- Put on your watch and choose a language.
- Tap on Start Pairing both on your watch and in the Apple Watch app on your iPhone.
- Tap on the "i" / info icon on your Apple Watch.
- Your watch's device name should appear on the display.
- On your iPhone, tap the matching device name that should now also be displayed there.
- A six-digit code will appear on your Apple Watch - enter this on your iPhone to pair, then continue with set up as nomal.

For the best performance, ensure that you keep both Bluetooth and Wi-Fi enabled on your iPhone.
In case of any confusion regarding terminology:
- Your Apple Watch and iPhone will become disconnected if they move out of range of each other - this is normal. When disconnected, Apple Watch will display a red status icon (phone symbol with a line through it). When brought back within range of each other, they should reconnect automatically (and the icon will disappear from your watch face).
- Whether connected or disconnected, your watch and iPhone will remain "paired" permanently (until they are unpaired or erased).
