Backing up from an earlier time...

This morning I upgraded to iOS 8.4.1 on my iPhone 5s. I noticed a new folder in my photos app called bursts. I deleted the folder as there were only a few pictures in there and I figured the originals would remain in my photo library. For some reason they did not and I want to go back and restore from backup. I've done it once, but the photos are not there.

Is there a way to choose the time of backup? At this point there are only two options, one has the time of the last backup (unsuccessful) and one without a time. Neither are getting me back to those photos.
