Quicktime Player Lag! :(

I have looked up how to make it so quicktime doesn't lag and it looks smooth in a screen recording, but I can't. My Mac is updated 100% to the newest update, and I cannot change the quality on quicktime. I learned that that is what you're supposed to do, but it wont let me. I can only change the Mic and if it shows my clicks. Please help. :/
