How to eliminate Out-of-date email addresses from automatic selection???

Unless I am lucky enough to remember WHICH email address is the correct one for one person, Mail automatically selects one, often the Incorrect one. I simply need to edit OUT the OLD addresses! But, how? What's the process? Please!
