I updated my phone to ios 8.4.1 on an iphone 6 on Tuesday morning, since then I have been experiencing frequent shut offs, restarts and my battery wont display correct percentage. Any help or suggestions??

Try a forced restart: Simultaneously hold down the Home and On buttons until the device shuts down. Ignore the off slider if it appears. Once shut down is complete, if it doesn't restart on it own, turn the device back on using the On button. In some cases it also helps to double click the Home button and close all apps BEFORE doing the restart.
When I check the diagnostic and data section It shows a series of numbers with .panic.ips at the end. Any idea on what this means?
Nope. But it doesn't necessarily indicate cause. Probably a result of the shut downs.
I have the same issue with an iPhone 5 and it is only happening when I am connected to WiFi. If I turn off Wifi - it stops crashing. I've tried forced restart and resetting the phone but nothing is working.
I have same problem about battery display percentage. Today, battery percentage downed %32 to %19. After that, my 5s switced off. When I plugged to charger, 5s turned on and the percentage was %29. I hope there's software problem.

Unless I missed something - I was just reinstalling 8.4.1 because it didn't install correctly for whatever reason. But that is just a guess.
