Is there a way to add a photo to a text/imessage w/o using drag and drop? On the iPhone or iPad there's a little camera icon that can be clicked and a photo selected. On the mac it needs to be dragged and dropped. This is very difficult for a person with extremely limited mobility, is there a way to get the camera icon on iMessage on the mac itself?

Locate the photo using Finder (or place it on your desktop). Control click (or right click) on the photo. Then choose "Share > Messages". That will cause the photo to be placed into a new iMessage conversation.

This can also be performed using a photo in the Photos app. Simply highlight the photo of interest, click the "Share" button that looks like this:
Choose "Messages" from the resulting dropdown and there you will have it.
