Ukraine is absent
when creating apple ID I am unable to choose the country of which I am a citizen which leaves me rather annoyed (I am from Ukraine), as I am sure not the only Ukrainian who owns an Apple product

If a country is not present in the list then the services are not available. Not every business in the world is represented in every country.
Even if you are Ukrainian, if you are resident in another country you are supposed to use that country's Apple features (the terms of use specifically say so), not the country of your nationality.
