So I've noticed in the Touch ID and Passcode settings that there's a switch that says "Use Touch ID for Apple Pay." I prefer not to use Touch ID, but would like to use Apple Pay. When I go to the store and use Apple Pay, will it just prompt me for my passcode, or will it not work entirely?

The User Guide indicates that, if you choose not to use Touch ID, you will need to authenticate with your passcode instead.

Look like you can pay with passcode if you wish. Under Settings > Touch ID & Passcode you can separately enable/disable Touch ID for iPhone Unlock, Apple Pay and iTunes & App Store. With it disabled the passbook app gains a Pay with Passcode legend.
