im wondering if their is a way to see if someone is hacking my phone, or to find hidden apps or programs

If it's never been jailbroke, it's not being hacked. If, however, it has ever been jailbroke, all bets are off.
Go to Settings, General, Usage, Storage and show all apps. Unless you have a jailbroken iPhone apps cannot be hidden.
To clear things that could hang the system, do a reboot by holding both the power and home buttons until the Apple logo appears, takes about 10-40 seconds, then release both buttons.
Does the clear whatever you are seeing?
